Yesterday started out fabulous. And by fabulous, I mean just flat out awful. When I went to get Rachael when she woke up, it smelled really weird in her room. Walked over to find out there was throw up all over the crib. I have no idea when it happened, but it wasn't super fresh so she slept in it for at least a little while. Blegh! She never cried in the night though, so I never knew. Miraculously, she managed to keep all three of her stuffed animals out of it. I have no idea how that happened, but boy was I grateful I didn't have to clean them too! So she also had a bath yesterday morning. At least she likes baths. She only really ate her breakfast yesterday, and didn't have much of an appetite the rest of the day. She didn't even want her noodles at dinner (this kid loves her noodles). She did keep drinking her milk though, so that's good. But then twice during the day I had to deal with the other end of smelliness. And go through three pairs of pants. I guess it's time for another load of laundry for her! On sanitize cycle.
Oh and the squealing crazy toddler continues. Joy. At least she was still having fun, and smiling and playing. She wasn't pitiful yesterday. Although with the squealing, I might just prefer pitiful.
So needless to say by the end of the day I could have drank an entire bottle of wine by myself, as well as eat an entire box of Thin Mint cookies. By myself. No Joke. BUT I didn't have either. A friend called shortly after I got Rachael to bed, so that helped me focus on other things and not the dessert I really, really, really, REALLY wanted!
So here was yesterday's menu round up:
Breakfast: a scrambled omelet with the homemade sausage, mushroom, green onions, baby greens, topped with parmesan with a cup of jasmine green tea.
Lunch: leftover chicken fajitas with salsa and a little sour cream.
Snack: some sunflower seeds
Dinner: I made the carrot-ginger soup from the cookbook. Only changes I made were I used a whole onion and added a little bit of heavy cream to make it a little creamier. I also have an immersion blender which is just awesome because you can blend it all up right in the pot. I also made some coconut chicken strips. I did an egg wash first, then dredged them in an almond flour/unsweetened shredded coconut blend that was about 50/50 with a little salt and pepper. Then baked them in the oven at 375* for about 25 minutes. I used the soup as a dipping sauce for the chicken, and it was actually pretty good! Here's a picture:
Here's hoping Rachael is feeling better today. She's still asleep, which is always good. But we have errands to run today, so she needs as much rest as she can get! I will try harder to get today's post up today! ;)
