Chicken Gyros with Tzatziki Sauce

Man it's been a while since I last posted here. For those that follow, I hope you didn't miss me too much. :-p Hopefully I will be updating this a little more frequently in the coming months, but we'll see. Definitely have a couple projects that will eventually be posted, so you can at least look forward to that.

A couple weeks ago, I found a recipe on Pinterest for Chicken Gyros with Tzatziki Sauce that I wanted to try, so I finally did tonight. I'm not a huge fan of cucumber, so I was hoping the tzatziki sauce didn't end up with too much cucumber taste. From the original recipe, I added more base ingredients, but kept the amount of cucumber the same so it wouldn't be overpowering. I also added more sour cream from the original recipe, but that was by accident because I misread the amount. Turns out that was a good thing, because it turned out great! Chicken Gyros with Tzatziki Sauce

Chicken Ingredients:
·         2 boneless skinless chicken breasts
·         ½ cup olive oil
·         4 Tbsp lemon juice
·         3 Tbsp garlic, minced
·         2 tsp dried oregano
·         1 tsp onion powder
·         1 ½ tsp salt
Tzatziki Sauce Ingredients:
·         1 cup cucumber, peeled and seeded, finely diced
·         ¾ cup plain greek yogurt
·         ¾ cup sour cream
·         1 ½ tsp dried mint leaves
·         1 ½ tsp dried cilantro
·         1 ½ Tbsp lemon juice
·         1 garlic clove, minced
·         ¼ tsp salt
Additional Ingredients:

·         Pita bread
·         Green leaf lettuce
·         Sliced tomatoes
·         Red onion, thinly sliced
Directions:
1.       Add chicken to a quart sized Ziploc bag. In a small bowl, combine remaining ingredients and mix together. Pour over chicken and seal bag. Refrigerate and marinate at least 2 hours.

2.       For tzatziki sauce, combine all ingredients in a medium bowl. Cover and refrigerate.

3.      After marinating the chicken, prepare a grill, or indoor grill such as a George Foreman grill. Place chicken on grill and cook through. Once the chicken is cooked through, remove and cut into slices.
4.     To make gyro, layer pita bread with lettuce, chicken, tomatoes, red onion, and tzatziki sauce.

Tada! The picture is only so-so because the pita wouldn't stay closed long enough for a photo. Just wish I knew how to wrap them like the pros and then it would be super fancy. I also decided to serve mine with some homemade sweet potato fries. Very tasty as well!

I will definitely be adding this recipe to my recipe book. It was pretty easy to make, especially if you are able to prepare the marinade and tzatziki sauce ahead of time. Let me know what you think if you give it a try!
